The coup de grace after a decade of co-development. This bourbon finished Mel® is double-oaked to form aromatics of blackberry, red licorice, and subtle paw paw. The palate opens with bold honey flavor and closes with a long candied almond finish. Rich, well-married, and coating, truly a singular spirit.


This years holiday release is quite special. A double oak Mel®. After six years housing our blue corn bourbon, we utilized this well seasoned cask to finish our flagship Mel®. The end result exceeded our expectations.  


Geri's instincts with flavor development and integration still perplex me. As we are harvesting Birobur™ Bourbon Barrel #1, she turns to me and states "we are going to finish a Mel® in the next bourbon barrel." At that moment, Birobur™ Mel® was born. Our first and based on this spirit, certainly not our last.  


Composition:

  • 100% Northern Michigan Cherry Blossom Honey | Cherry Bee Farms Kewadin, Michigan.
  • Double Oaked in a 6 year old blue corn bourbon cask.
  • Mashed, Fermented, Distilled, Barrel Aged and Bottled in Elk Rapids, Michigan.
