A rare blue corn, grown just up the road from the distillery imbues this unique spirit with terroir driven flavors, textures and aromatics that are not found in any bourbon to date. The spirit is further punctuated via a Mel® finishing cask. Mel® imparts mature flavors of bananas foster, adds subtle complexity and takes this remarkable spirit to new heights. Teasing out subtitle sweetness of Bavarian almonds, and further driving rich flavors of pipe tobacco and blackstrap molasses.
Bold and proportionately elegant. Refined yet reminiscent. A bourbon that is best enjoyed slowly. Neat, and with friends.
Birobur™ Bourbon Barrel #3 Details:
- Mash bill: 100% Blue Corn grown at @shooks in 2019. In 2019 we started mechanized drying of the corn. Agronomically & compositionally higher quality corn. I.e. In year two we started to figure out how to grow it + good precipitation. Barrels #1 & #2 were derived from 2018 corn.
- Milled. Mashed. Distilled. 💯% in Elk Rapids Michigan. Proudly. Always!
- Barreled in #2 char, new American white oak in Dec 2019. Mel® cask finished.
- Rickhouse #1 (OG barrel room) - low tier barrel.
- Nose: Crème Brûlée/tasted brown sugar, fig, almond brittle + grape sweet tart. Refined, fruity, floral. Flagrantly different & perplexing on the bouquet, yet distinctly traditional bourbon volatiles.
- Mouthfeel/body: Viscous, velvety, textured + coating. Body: Medium to full.
- Palate: Subtle & sumptuous upfront w/balanced oak, vanilla bean & oiled leather + an interesting touch of baking spice & violet. Mid-palate is clean w/dried fig, + almond w/nuanced toasted grain, followed by a resplendently long sweet ester finish.
- Yield: 208 bottles
- Proof: 90/45ABV
- The most developed and well-rounded barrel to date. Relevant Factors: Corn harvest, yield and crop quality, drying method, and development of distillers skill set.

*Release Day Details:
- Barrel #3 is LIMITED TO *4 BOTTLES PER/PERSON. *If everyone in line gets bottle we will allow for additional purchases.
- Doors will open at 11:00am on Saturday 1/31/2026, samples of barrel #3 will be provided and tickets will be given out.
- Each ticket 🎟️ will represent one bottle reserved.
- Cocktail bar will open at noon for those waiting.
- Bottles will be released at 1:00pm.
- Free Distillery tours will be provided at 11:30 and 12:15.
- Head distiller Geri will be around to discuss details that are above our knowledge base regarding barrel #3 + what is coming up for 2026.

Distillers Nosing & Tasting Notes (general):
Blue corn twists preconceived flavor profiles and leaves taste buds in pleasant befuddlement. Aromas begin with date, blackstrap molasses, and grape blossoms. This lends to soft flavors of brown sugar and baking spice that crescendo to a long candied almond finish, all while maintaining a classic grainy mid-palate. Textures are slightly coating and building in warmth.
